EDū is a contemporary Spanish food concept with influences from other world cuisines where most of the core ingredients originate from Spain. The ‘mixto’ concept, created by Eduardo and Dani came about by realising the need to do something different with Spanish cooking in the UK, moving away from the classic tapas bars whilst staying true to traditional Spanish ingredients and recipes.
Eduardo met his head chef and business partner Daniele Pino over 10 years ago in the southern Spain but lost contact until recently. When Eduardo came up with the idea he got in touch with Danie who was very excited to get on board. Prior to EDū, Dani had been working at Bao London, Chiltern Firehouse and Galvin.
The menu is a moving feast, changing regularly, using seasonal
produce with signature dishes staying faithful to the menu, including the ‘cheeky dog’, Spanish pork belly baos and the EDū burger. EDū will use a variety of cooking techniques and equipment including
installing a Big Green Egg by Alfresco Concepts into their first site in Flat
